There is an exciting restaurant concept within the Hotel Prince de Galles and at its helm is Akira Back, an extraordinary, Michelin-starred chef. Since the early days of his career, Chef Akira has been influenced by modern Japanese food, Korean cuisine and international gastronomic flourishes- he aims to take diners on a delicious journey to discover his exciting take on global tastes in an electrifying atmosphere. 

 

With 21 international locations to his name already and exceptional skills recognised by the prestigious Michelin guide, Chef Akira brings his exceptional Japanese food to Europe for the very first time.

    THE BEGINNING

    An atypical path

    Born in South Korea, Akira Back grew up in Aspen, Colorado in the United States where he fell in love with the slopes. After a bad injury put a stop to his career as a professional snowboarder, this aspiring chef decided to learn everything he could about Japanese cuisine.

    The first Restaurant

    Rise to fame

    By 2008, Akira Back chose Las Vegas for his first restaurant. Located in the heart of the Bellagio Casino & Resort, Yellowtail introduced ‘a new culinary experience where Japanese and Korean cuisine was made accessible to all. A cuisine of energy made to excite and stimulate the senses'. Named ‘Best Chef in Las Vegas the same year, this remarkable talent then became a sensation through the TV show ‘Iron Chef'.
