An Atypical Path
Born in South Korea, Akira Back grew up in Aspen, Colorado. He fell deeply in love with the mountain slopes there. A bad injury stopped his career as a professional snowboarder, unfortunately.
This aspiring chef decided to learn everything about Japanese cuisine instead. His determination transformed disappointment into culinary passion and purpose. Today, that journey inspires every dish at his Japanese food restaurant.
Rise to fame
By 2008, Akira Back chose Las Vegas for his first restaurant. Located in the heart of the Bellagio Casino & Resort, Yellowtail introduced ‘a new culinary experience where Japanese and Korean cuisine was made accessible to all. A cuisine of energy made to excite and stimulate the senses'. Named ‘Best Chef in Las Vegas the same year, this remarkable talent then became a sensation through the TV show ‘Iron Chef'.
